INGREDIENTS :

  • 1 duck breast passed through the meat mill (keep its fat)
  • 1/2 white onion, chopped
  • 1 garlic clove, chopped
  • 80 ml (1/3 cup) chicken broth
  • 80 ml (1/3 cup) of Maple syrup
  • 15 ml (1 tbsp) of Dijon Mustard
  • 37 ml (2.5 tbsp) oatmeal
  • 1/4 tsp. 1/2 teaspoon ground cinnamon
  • 1/4 tsp. ground cloves
  • 1/4 tsp. 1/2 teaspoon ground ginger
  • 1/4 tsp. ground nutmeg
  • Salt and pepper, to taste

PREPERATION :

  1. In a saucepan over medium-high heat, combine the chopped duck breast and onion and brown for 1 minute, stirring.
  2. Add the garlic, then stir for another 1 minute.
  3. Add all other ingredients and simmer over medium-low heat for 20 minutes, until the broth is completely absorbed.
  4. Remove from heat and mold into small dishes.
  5. Cool overnight.
