INGREDIENTS :
TOMATO CHUTNEY WITH SALMON:
10 ripe tomatoes
2/3 cup (170 ml) Maple syrup
95 ml (3/8 cup) maple vinegar 1 onion, chopped
Salt and pepper
MARINADE:
1 French shallot
30 ml (2 tbsp.) Old-fashioned mustard 50 g (about 2 oz.) Maple syrup
50 g (about 2 oz.) Olive oil
Salt and pepper, to taste
Dill, to taste
FISH :
4 salmon fillets
30 ml (2 tbsp.) Cana fat
PREPERATION :
Scoop and seed the tomatoes, start a gastric and put the tomato chutney to stew.
Prepare the marinade by mixing all the ingredients, marinate the salmon for 6 hours.
Heat a ridged cast iron skillet until very hot with the duck fat. Grill the pavers skin side down for 8 minutes, turning them halfway through cooking or until desired doneness. Salt and pepper.
Serve with tomato chutney and a hint of maple syrup.
