INGREDIENTS :

30 ml (2 tbsp.) Duck fat

2 garlic cloves, chopped

1 finely chopped onion

750 ml (3 cups) carrots, peeled and cut into large cubes

60 ml (1⁄4 cup) maple syrup
1/3 cup (75 ml) orange juice
1 liter (4 cups) chicken broth
1 potato, peeled and cut into large cubes 125 ml (1⁄2 cup) cream 15 %
Salt and pepper from the mill

PREPERATION :

  1. In a large saucepan, melt the duck fat. Brown the garlic and onion for 3 minutes. Stir in the diced carrots and maple syrup, then brown for 3 minutes. Deglaze with the orange juice and reduce for 2 minutes.
  2. Add the chicken stock and add the diced potatoes. Add salt and pepper to taste. Simmer over medium heat for about 20 minutes or until the vegetables are tender.
  3. Pass everything in a food processor or electric mixer until you get a nice creamy soup. Return to the saucepan, add the cream and whisk a little. Adjust the seasoning, then heat for 5 minutes. Serve steaming.
