Difference Between Maple Syrup and Maple Water
Both water and maple syrup are taken from the tree. The water is maple sap at 100%, without transformation and which is obtained simply by collecting it from the tree at the very beginning of the Canadian spring. On the other hand, to obtain maple syrup, it is necessary to boil this sap. Maple sap is therefore a pasteurized version of the sap. Syrup is obtained by bringing the sap to a boil for a long time, so as to obtain a thick and condensed liquid.
Producing one liter of maple sap only requires one liter of sap. In comparison, to produce one liter of maple syrup, it takes nearly 40 liters of sap. In addition, the maple sugar concentration is only 2% in maple sap, compared to about 66% in maple syrup.
