INGREDIENTS :
1 lobster
1 liter of Spell (Canadian whiskey and maple syrup liqueur)
A sufficiently large jar to immerse the lobster with 75 cl of whiskey
For the court bouillon
4 liters (16 cups) maple water
1 carrot, 1 leek, 1 white onion, 1⁄4 celery stalk, 1 head of garlic, black peppercorns, 1 bay leaf
PREPERATION :
First, put the lobster to marinate in Sortilège for 2 hours.
Meanwhile, halve the maple water and the court-bouillon garnish.
After two hours, take the lobster out of the alcohol to put it in a large jar and cover it with maple water court bouillon for about 5 to 6 minutes.
Take out and shell the lobster. It is important to pass the broth through Chinese cheesecloth.
