Maple and cheese soufflé

PREPERATION :

Preheat the oven to 200 °
In a large bowl, using a whisk, combine the egg yolks, milk, syrup, chives, flour, nutmeg, salt and pepper. Stir in the cheese. To book.
In another bowl, using an electric mixer, beat the stiff peaks until stiff peaks form. Using the whisk, gently fold a third of the egg whites into the reserved egg yolk mixture. Incorporate the rest of the egg whites in the same way. Pour the preparation into 8 buttered and floured ramekins with a capacity of 250 ml each or a large Pyrex dish.
Bake for 20 to 25 minutes or until soufflés are puffed, golden brown and firm under light pressure with your finger.
Serve immediately
