Ingredients
- 1/2 kg of wild Canadian blueberries
- 100 g sliced pastrami
- 150 ml dry red wine
- Four rye loaves
- Four teaspoons of mustard
- Two tomatoes
- ½ bunch of arugula
- Three tablespoons of honey
- A tablespoon of balsamic vinegar
- ½ teaspoon cumin
- A teaspoon of mustard seeds
- Three teaspoons of sunflower oil
- A piece of ginger
- A red pepper
- Two onions
Preparation
Peel your onions before cutting them into cubes. Also cut the pepper lengthwise and remove the seeds. Cut it into slices. Peel the ginger before slicing it. Brown the ginger, onions and chilli slices in oil. Add your cumin, mustard seeds and blueberries. Cook for two minutes at a low simmer. Deglaze everything with vinegar and red wine. Add the honey, then leave to thicken for ten minutes. Cool this relish. Peel and wash the arugula before draining it. Wash the tomatoes to cut them into slices. Cut the loaves in half lengthwise. Brown the bread halves on the crumb side in a pan. Be careful not to add any fat. Spread the bottom halves of bread with mustard (one teaspoon) and add the arugula. Place your tomato slices on top and cover with a generous slice of pastrami. Spread the relish on the pastrami and cover with the other part of bread.
