INGREDIENTS :
- 2 large potatoes, peeled
- 125 ml milk
- 60 ml of syrup
- 4 eggs, beaten
- Garlic powder and pepper to taste
- 1/2 red pepper
- 30 ml chopped fresh cilantro
- 1 red pepper, seeded into chunks
PREPERATION :
- Cook the potatoes in salted water for 20 minutes
- Drain then pass the mashed potatoes with the milk, maple syrup and eggs
- Season with garlic powder, pepper and incorporate half the pepper with the cilantro
- Cook in a bain-marie with water up to half of the mussels, in an oven at 205 ° for about 40 minutes
- Meanwhile, put the remaining red pepper in a small pot of water and cook until tender.
- Pass the cooked pepper in a food processor and add a little cooking water for a nice consistency.
- Pass everything through a sieve to remove the skin
Serve hot
