First, you have to tell the difference between poutine and hole poutine. The first consists of a typical Canadian dish. It is best enjoyed with dinner or lunch. Indeed, the classic poutine is a meal made with fries, gravy and cheese curds.
For its part, the cheese fries à trou is presented as a donut-shaped dessert deliciously filled with raisins. There are also other typical Quebec fruits, such as cranberries and blueberries. This preparation is topped with a sauce made from water and brown sugar which enhances its flavors.

For the dough
- 625mg flour
- 20mg baking powder
- 3mg salt
- 30mg of sugar
- 60 ml fat (lard, butter)
- 175ml milk
For garnish
- 4 apples
- 125 g large raisins, cranberries or blueberries
For the syrup
- 250ml brown sugar
- 175ml water
Preparation
- To prepare your hole poutine, start by sifting the flour before mixing it with the sugar, salt and baking powder.
- Add the butter or fat you have chosen.
- Slowly pour in the milk. The dough will take on a cookie dough texture.
- Roll your dough so that it gains a diameter of 15 cm.
- Peel your apples before cutting them into pieces.
- Place raisins and apples on the dough rounds.
- Model the edge of the dough using water or milk.
- Bring the dough back to form a ball.
- Close and place your poutine balls on a baking dish.
- Make a 15mm hole in each poutine.
- Put your preparation in the oven at 190°C for 30 to 40 minutes.
- In the meantime, prepare the syrup by creating a mixture of sugar and water. Boil the water.
- When the poutines are cooked, remove them from the oven before pouring the syrup into each hole in the donut.
- You can serve hot or cold.
